BBQ Shredded Chicken Sandwich

I lived in the South for a good chunk of my adult life and you can't beat the comfort of southern feels, especially when it comes to their food! Unfortunately, comfort food typically comes fried, with a lot of sugar (I love sweet tea) and a ton of calories. This is such a simple hack to enjoy those foods, make a simple meal prep for the week and stay on track with your health and fitness goals

Calories (per sandwich): 340

Carbs: 34g

Protein: 35g

Fat: 7g

Ingredients:

Coleslaw:

-1/2 Cup Nonfat Plain Greek Yogurt

-3 1/2 Tbsp Cider Vinegar

-1 Tsp Kosher Salt

-3 Tbsp Sugar

-1/8 Tsp Black Pepper

-16 ounces bagged coleslaw blend or shredded cabbage

Sandwich:

-4 Orowheat Multigrain Sandwich Thins

-4 Slices Velveeta Cheese (yes we love Velveeta around here)

-16oz Chicken Breast

-4 Servings G. Hughes Sugar Free BBQ

-Franks Red Hot

What to do:

  1. In a crock pot leave chicken cooking on Low for 2-3 hours. Use either a Meat shredder or honestly with how moist the chicken is you can simply shred it up with two forks

  2. In a large bowl combine coleslaw ingredients and stir

  3. Toast the sandwich thins on medium heat

  4. Add chicken, cheese, coleslaw & condiments on sandwich thins & enjoy!
