Chicken Sausage Breakfast Hash

This dish is one of the most flavorful ones I've made to date! Packed with so many nutrients! Meal prep it for the week or enjoy for Saturday brunch with the fam!

Ingredients (Makes 3 servings):

-9 Egg Whites

-255g Hash Browns (I used Trader Joe's Shredded Hash Browns, but you can also peel your own potatoes pretty easily)

-3 Chicken Sausage Links

-1 & 1/2 Cup Spinach

-6 Tbsp Mexican Shredded Cheese

-1 & 1/2 Cup Chopped Up Bell Peppers

What to do:

  1. In a large sauce pan prepare your hash browns at high heat. Stir until it starts to turn golden

  2. In a separate pan make your egg whites. Separate the yolk from the egg and cook scrambled until it's at your preferred consistency

  3. Chop up the sausage links into coin sized pieces. Spray Pam on another sauce pan and let simmer on medium heat until cooked through. About 5-8 minutes

  4. Sautee your spinach and peppers in one more separate pan. Spray the vegetables with Pam and cook on medium for about 2-4 minutes

  5. Serve all together in this order: Hash browns, egg whites, vegetables, chicken sausage & sprinkle your cheese on top! Serve with a dash of hot sauce! You're going to love it!
