Sweet Potato Shepherds Pie



Serves 4 or 1 Large man 🙃

What you’ll need:

-10oz Sweet Potatoes

-12oz 92% Ground Beef (Can use Turkey)

-2 Cups Mixed Veggies

-1 Cup Beef Broth (Vegetable Broth works too)

-1/2 Medium White Onion

-2 Cloves Garlic Minced

-Kosher Salt

-Ground Black Pepper

-Cinnamon

-I Can’t Believe It’s Not Butter Spray

-Thyme

-Garlic Salt


Instructions:

  1. Make the Mashed Sweet Potatoes. Peel & chop the potatoe, add them to a pot, cover them with water, bring them to a boil, then cover & simmer on low until tender. Strain & mash together in a bowl

  2. Cook the beef on the stovetop on Medium heat until cooked all the way through. Add Minced Garlic, Broth, Salt, Pepper & Onions & let simmer

  3. Cook the Veggies on the stovetop or in the microwave for a few minutes until ready

  4. Preheat oven to 375 F degrees

  5. Cover the beef & veggies mixture with the mashed sweet potatoes. Add a few sprays of butter, cinnamon & thyme to the top layer

  6. Place the pie into the preheated oven for 15-25 minutes (until the edges get a light golden brown crisp to it)

  7. Serve with a dash of Garlic Salt & enjoy!
