BBQ Pulled Chicken Stuffed Sweet Potatoes


This recipe tastes like your sipping sweet tea on the back porch in the southern states. You would never know how clean this meal is! After a long work day the last thing you want to think about is cooking and then cooking your bland diet chicken food. That's why this meal is so perfect! A spin on your typical bodybuilder food, made fun & very simple to make. Slow cook that chicken at work and come home to an easy & delicious dinner the whole family will enjoy!

What you'll need (makes 1 -adjust according to your macros):

-6oz Sweet Potato

-4oz Chicken

-1 slice Velveeta Cheese (can use shredded as well)

-BBQ Sauce (We use G. Hugh's Sugar Free BBQ often)

-1/8 Cup Green Onions

-1/8 Cup White Onions


Keep it simple!

  1. Cook chicken breasts in slow cooker on medium for 3-5 hours. Once it's all cooked shred it up. I'm basic and will just use 2 forks to do this, but a mixer will make it quick

  2. Mix BBQ in with the chicken, you can also cook it in with it and add a little extra once it's done

  3. Prepare your sweet potato. Some like to bake them, but like I said this is a meal you want to make easy -just pop those potatoes in the microwave for 10 minutes each, turning every 3 minutes and poke holes in it for it to breathe!

  4. Fill your sweet potato with the shredded chicken, add chopped up slice of cheese and let melt. Garnish with green and white onions! Easy peasy!
